Fall Tune-up Special

Cool weather is here and old man winter is nearly upon us so you'll want to be sure your heating system is ready to fight off the figid air. If this year's wild weather taught us anything it is to be prepared for the worst mother nature has to offer us.

If your heating or air conditioning system was affected by the storm or you want to make sure that power outtages and inclement weather haven't damaged your system, please schedule a system checkup.

If you were lucky enough to escape the wrath of Sandy, please remember that thousands of our friends to the north remain displaced by the storm. The Boothe's staff is a like a family and we've shared plenty of good times and good food. Jenny's Corner is our way of sharing some of our treats, good stories, and household tips in hopes that they might warm your hearts and homes too.

Sweet Potato Casserole

Don't mistake the term casserole for anything other than the most delicious spin on sweet potatoes this side of the Mississippi River. This dish is equally suited as a side to your stuffed ham or as the main attraction for dessert - a la mode.

  • 1 large can of sweet potatoes (40 oz.), drained
  • 1/2 tsp butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/4 tsp nutmeg (optional)
  • 1/2 tsp cinnamon (optional)
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1 cup chopped pecans
  • 1/3 cup melted butter
  1. Preheat oven to 350° and mix filling ingredients until blended to your liking. For a slightly firmer filling, add a bit a flour in the last moments of mixing
  2. Pour into buttered (or non-stick sprayed) dish, glass 9x9
  3. In large bowl, mix topping ingredients until well blended, then crumble evenly over top of filling
  4. Bake for 40-50 minutes uncovered, edges should begin to brown and firm
  5. Serve warm as a side dish, or as a tasty dessert treat with a scoop of vanilla or butter pecan ice cream
  6. Enjoy!
